For any of our friends who were not able to make it to last week's high energy Halloween celebration at the Roots Cafe, you can still experience the fun treat we gave away: poi brownies!
Halloween Poi Brownies
Ingredients:
• ¾ lb poi
• 2 tablespoons melted coconut oil
• 3/4 cup pure maple syrup
• 1 1/2 teaspoons pure vanilla extract
• 2 large eggs
• 1 cup flour
• 1/3 cup unsweetened cocoa powder
• 1 1/2 teaspoons cinnamon
• 1/2 teaspoon ground nutmeg
• 1 teaspoon baking powder
• 1/4 teaspoon kosher salt
• 1/2 cup butterscotch chips
Directions:
Preheat the oven to 350 degrees F. Coat an 8×8-inch pan with baking spray. Set aside.
Warm the poi until malleable. Beat in the melted coconut oil until combined, then beat in the maple syrup and vanilla extract. Beat in the eggs 1 at a time, stopping to scrape down the bowl as needed.
In a separate bowl, stir together the flour, cocoa powder, cinnamon, nutmeg, baking powder, and salt. Add the dry ingredients to the wet ingredients and mix gently, until incorporated. Fold in the butterscotch chips.
Scrape the batter into the prepared baking and bake for 25-30 minutes, until a toothpick inserted in the center comes out clean. Place the pan on a wire rack and let cool completely. Gently lift the brownies out of the pan onto a wire rack. Slice and serve.
